Kid Approved Sesame Peanut Noodles

My fridge looks like it’s been mugged. I ran out of bread last night, I’m on my last dreg of orange juice, and I haven’t gone grocery shopping in two weeks. I didn’t feel like going to the market, as I’ll be leaving soon for New Orleans to revel in bountiful food, dranks, and debauchery. However, I did manage to whip up lunch from the ingredients I still had on hand. Fortunately, my sad, slightly wilted green onions were still salvageable.

I enjoyed these noodles, although the mixture was quite thick. The only change I made was to combine the pasta + sauce immediately instead of letting the pasta cool. Next time I’ll thin the sauce a bit and add some sort of protein to the dish.

Sesame Peanut Noodles

  • 6 oz dry pasta
  • 1/3 cup reduced fat peanut butter
  • 1/2 cup water
  • 3 tbsp ketchup
  • 3 tbsp hoisin
  • 2 tbsp low sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • scallions

Cook the pasta (I used whole wheat spaghetti). Combine everything else except the scallions and warm until all the ingredients meld together. Pour the sauce on your pasta and top with sliced scallions.
